Quick & Easy Pizza

Mini Buddy loves going out for pizza at Pizza Hut and Pizza Express and it took me ages to find a pizza dough that worked well at home. It is now a firm favorite in our house with him and his best buddy. Its a simple recipe that can be thrown together.

Ingredients (makes 1 child size pizza)

*75g Self Raising Flour + a little extra

*10g Fat (we use Asda soft spread as seen in photos

*Water

*Toppings of your choice

Method

*Place flour and fat in a bowl and rub fat into the flour using finger tips.

*Add a little water at a time to bring to a dough (like playdough consistency)

*Knead the dough for a further 5 minutes then wrap in clingfilm and put in the fridge for a minimum of 30 minutes. You can make in the morning and leave in fridge all day.

*Pre-heat oven to gas mark 4 when you are ready to cook.

*Roll out the dough to desired thickness, mini buddy likes thin base, and place a small plate on top and cut around Use the extra flour so it doesn’t stick to worktop and rolling pin.

*Place base on a baking tray (i line with greaseproof paper)

*Top your pizza. We use Ragu Original Smooth sauce as it’s only tomato sauce Mini Buddy can eat (I split a jar and freeze).  If you have allergies to tomatoes you can use blended veg, butternut squash is a good one. Add any extras, ham, mushrooms, sweetcorn…

*Cook for 10-20 minutes depending of thickness of your pizza base.

Ta-da your very own Free From Pizza.

For an extra serve with garlic bread. We use Aldi’s Garlic Toasties (fridge section) which is Dairy, Egg & Soya free.

Allergy Buddies are custom made products to alert everyone of a child’s allergy or intolerance.

Inspiration

Ever had an instance at a crèche, party, play-gym where someone has given your child something that made them ill? Yes me too. I’m sure like me you want to keep your child safe and that is where Allergy Buddies comes in. My little chap is so far intolerant to diary, eggs and we think citric acid as well as hayfever of every description and pet allergies. So I decided to create a brand that would allow a child’s allergy/intolerance to be easily identified by any carer, teacher and other parents and to help prevent those dreaded slips.
